Morning Muffins: Chocolate Chip and Cinnamon Crumble Recipes

My little ones have been loving muffins in the morning and even sometimes for an afternoon snack. I was sick of over paying at the grocery store so I started trying my hand in a few different recipes. These two definitely passed the test!

The first -  Bakery Crumble Chocolate Chip Muffins 

I made these in regular size muffin pans, so this recipe actually makes 24! 

Muffin Ingredients 

  • 2 & ½ cups (315g) all-purpose flour
  • 1 tbsp (13g) baking powder
  • 1 tsp (5g) baking soda
  • ½ tsp (2.5g) salt
  • ½ cup (114g) unsalted butter, melted and cooled
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 cup (250ml) buttermilk (I mixed milk and lemon juice)
  • 1 tbsp (15ml) vanilla extract
  • 1 & ½ cups (275g) semi-sweet chocolate chips

Crumble Topping

  • 2 tblsp sugar
  • 4 tblsp brown sugar

Instructions

    1. Preheat oven to 425°F. Spray a 12 cup muffin tray with non-stick cooking spray or line with paper liners.
    2. In a large bowl, toss together the flour, baking powder, baking soda, salt and chocolate chips. Set aside.
    3. In a medium bowl, whisk together the melted butter, sugar, eggs, milk and vanilla. Slowly add to the dry ingredients. Gently fold together until JUST combined.
    4. Divide the batter into the 12 muffin cups, sprinkle on the topping and bake at 425°F for 5 minutes. Then reduce the oven temperature to 375°F and continue to bake for another 12-15 minutes or until a toothpick inserted into the center comes out clean. Do not overbake or the muffins will be dry. Let cool for about 5-10 minutes and enjoy warm
Cinnamon is definitely a preferred flavor in our home. I was dying to try this Cinnamon Crumble Muffin recipe - it did not disappoint! 

Muffin Ingredients 
  • 1 1cups flour
  • 1cup sugar
  • teaspoons baking powder
  • 1teaspoon salt
  • 1teaspoon ground nutmeg
  • 1teaspoon ground allspice
  • 1 egg beaten
  • 1cup milk
  • 1cup butter, melted
    TOPPING
  • tablespoons sugar
  • 1teaspoon ground cinnamon
     

    DIRECTIONS

    • Mix flour, sugar, baking powder, salt, nutmeg and allspice.
    • Add egg, milk and butter.
    • Stir into dry ingredients until moistened.
    • Spoon into greased or paper-lined muffin cups.
    • Combine sugar and cinnamon - Add crumble topping to each unbaked muffin.
    • Bake at 400 degrees for 20 minutes or until done.
    • Enjoy and serve warm. Store in air tight container or freeze.
